Welsh Rarebit
Welsh rarebit or Welsh rabbit (/ˈrɛərbɪt/ or /ˈræbɪt/) is a dish of hot cheese sauce, often including ale, mustard, or Worcestershire sauce, served on toasted bread. The origins of the name are unknown, though the earliest recorded use is 1725 as "Welsh rabbit", a jocular name as the dish contains no rabbit; the earliest documented use of "Welsh rarebit" is in 1781
Ingredients serves 4
- 8oz grated cheese;
- 1 tbsp plain flour;
- 1 tsp English mustard powder;
- large pinch cayenne;
- 2 tbsp ale;
- knob softened butter;
- 4 thick slices crusty white bread.
Method
- Heat grill to high.
- In a large bowl mix all the ingredients, except the bread, together to make a soft paste.
- Toast the bread under the grill on both sides and then spread over the cheesy mixture.
- Grill for 5 ins until golden and bubbling.
