Fruit Kebabs

Recipe

As we move through autumn and have the pleasure of the fruits of the orchards and hedgerows why not try these kebabs.  It’s a different way of enjoying nature’s bounty.

Ingredients  makes 6-8 kebabs

Use any of the following

  • ½ Pineapple,  2 apples,  2 pears,  12 blackberries, 1 mango, 1 clementine,
  • Juice of 2 lemons
  • Tablespoon of runny honey
  • Plain Greek Yogurt or fromage fraiche to serve

Method

  1. Peel the pineapple, apple, pear and mango.
  2. Cut the larger fruit into 1 cm cubes.
  3. Segment the clementine and remove as much of the pith as you can
  4. Thread onto skewers alternating the fruits.
  5. Mix the lemon juice and honey together
  6. Baste the fruit skewers with the honey mixture
  7. Cook on a griddle or under the grill for 1 minute each side until just beginning to brown and soften.
  8. Serve while still warm with the fromage fraiche or yogurt.
