Dutch Clogs
Traditional Dutch clogs, or "klompen", are crafted from a single block of wood, typically willow or poplar, and shaped using hand tools. The process involves carving the outside, hollowing out the inside with spoon drills, and then smoothing and decorating the exterior. While modern clog making utilizes some machines, the traditional method emphasizes the skill and artistry of the clog maker.

Ingredients serves 2
- 2 medium sized baking potatoes
- 3oz grated cheese, you can use any hard cheese as long as it has some flavour
- 1 medium egg, beaten
- Salt and pepper to taste
Method
- Bake the potatoes in the oven, or cook in the microwave until soft all the way through.
- Once cooked halve the potatoes and scoop out the flesh into a bowl. Be careful not to break the skin, so you will need to leave a little potato attached to the skin.
- Mash the scooped flesh with the cheese and then mix in the egg.
- Season to taste
- Return the potato mix to the skins and place in a dish so they stay upright.
- Bake at 180C for about 30 minutes until the top is golden and the skin crispy.
