Creamy Hidden Bean Pasta Sauce
This pasta sauce is both health and dairy free, the use of rigatoni makes it less messy to eat, but you could use any pasta of choice.
Ingredients
- 2 tbsp olive oil;
- 4 garlic cloves, finely sliced;
- 2 x 400g tins chopped tomatoes;
- 400g tin cannellini beans, drained and rinsed;
- 200ml soya milk;
- 450g rigatoni;
- 1 tsp crushed chillies;
- 30g fresh basil, leaves picked and most finely chopped.
Method
- Heat the oil in a saucepan over a low heat and fry the garlic for 5 mins until softened.
- Stir through the tomatoes and increase the heat to medium-low and simmer for 20-25 mins, stirring occasionally until thickened and reduced by half.
- Blitz the beans and soy milk until smooth.
- Cook the pasta, drain reserving a mug of the water.
- Stir the bean paste through the tomato sauce and reduce the heat to low.
- Warm through for 5 mins, stirring frequently.
- Stir through the crushed chillies and chopped basil, season to tase.
- Add the cooked pasta and stir well to coat use the reserved pasta water to loosed if need.
- Top with basil leaves.
