Chocolate Orange Cake
Everyone of us will have our own favourite chocolate cake, but this one is a bit unusual with its zesty orange flavour.
Ingredients
- 225g butter;
- 225g caster sugar;
- 3 large eggs;
- Zest of 1 orange
- 250g self raising flour;
- 40g cocoa powder
- ½ tsp baking powder;
- 50ml milk.
- 50ml orange juice.
Decoration
- 200g softened butter
- 375g icing sugar
- 30g cocoa powder
- 80g zesty dark orange chocolate melted
- 1-2 tbsp orange juice
- 150g marmalade
- Halved orange slices [fresh or crystallised] to decorate
Method
- Preheat oven to 160 and grease and line two 20cm round sandwich tins.
- Beat butter and sugar together until pale and fluffy.
- Add the eggs one at a time with 1 tbsp flour. Mix between each addition to combine
- Beat in the orange zest
- Gently fold in remaining flour, cocoa powder, baking powder and a pinch of salt until well mixed.
- Stir in the milk and orange juice.
- Divide evenly between the two tins and level the tops.
- Bake for 25-30 mins. Leave to cool in tins for 15 mins and then turn out onto a wire rack to cool completely.
- To make icing and filling
- Beat the softened butter with the icing sugar until thick and fluffy.
- Whisk in the cocoa powder, melted zesty orange dark chocolate and orange juice to loosen.
- Spread 1 sponge with buttercream and marmalade. Top with second sponge.
- Cover top and sides with butter cream swirling into ridges.
- Top with halved orange slices.
