Chocolate Mud Cake

Recipe

Cadbury’s has long been synonymous with the Midlands and there are many chocolate recipes that make use of the products from the factory at Bournville.  This one uses the famous Bournville chocolate, which is not as bitter tasting as some of the higher cocoa butter content bars that you can buy nowadays.

Ingredients

  • 250g unsalted butter
  • 300g self raising flour
  • 250g brown sugar
  • 2 tbsp coffee powder
  • 1 tbsp baking powder
  • 300ml cups milk
  • 2 tsp vanilla essence
  • 45ml fresh cream
  • 1 tsp salt
  • 250g chocolate chips
  • 250g caster sugar
  • 80g Bournville chocolate
  • 100g cocoa powder
  • 3 eggs

Method

  • Line and grease an 8in round cake tin.
  • Melt unsalted butter and  chocolate chips in a bowl
  • Add brown sugar, caster sugar, eggs, milk, vanilla essence and whisk well.
  • Add flour, baking powder, salt, coffee powder, cocoa powder and mix well. 
  • Pour the batter into lined cake tin, bake at 160 C for 18-20 mins.
  • Cool in tin for 20 mins and then tip onto a wire rack and trim the top.
  • Combine fresh cream, milk, Bournville in a bowl and microwave for 40-60 secs [or melt the chocolate over a bowl of hot water].
  • Mix well to form a thick ganache icing
  • Pour over the cake and refrigerate for 2 hours before serving.
