Caramel And Coffee Ice Cream Sandwich

Ice cream sundaes might be the traditional treat on national ice cream day, but why not try an ice cream, sandwich. This is just one of many flavours you can make using different flavoured ice creams and biscuits. Others to try are strawberry ice cream with Viennese biscuits, run and raisin ice cream between oat and raisin biscuits or raspberry ripple between peanut cookies. 

Ingredients

  • 1 tbsp chocolate-coated coffee beans roughly chopped
  • 2 scoops coffee ice cream softened
  • 4 caramel wafers

Method

  1. Mix the chocolate coffee beans into the softened ice cream until combined, then transfer to a small loaf tin and freeze for a few hours or until solid.
  2. Use cookie cutters to cut the ice cream to the same size as the waffles, then sandwich between two waffles.
